Pruning

While the vineyards are lying dormant from December to March, the winegrower prunes each vine, leaving only one or two canes. This is “double Guyot pruning. On each of these canes, +there are 6 to 8 buds and each bud will produce one or two grapes.

Compost

Instead of using chemical fertilizers which feed the plant directly, we

have always preferred to manure the vineyards with compost. Compost

feeds the soil and improves its biological standards. It allows the development of

bacteria worms, etc, which in turn make the soil more fertile


The compost we use has been produced mainly from manure from a cow farm in the Vosges mountains, marc from pressed grapes, and distilled fruit

Four years ago we decided to change our boiler which was heated

with fuel oil for a new boiler in which the heating materiel is wood chips. These

are brought automatically from a storage bin. We wanted to use a biomass fuel

which comes from a renewable, sustainable resource base
